These holiday grilled potatoes two ways offer a delicious twist to your traditional holiday side dishes. One variation features cheesy goodness with cheddar cheese, while the other is adorned with savory bacon and fresh green onions. Perfect for adding some variety to your holiday feast!
Ingredients: 4 medium-sized potatoes, washed and scrubbed. 2 tablespoons olive oil. Salt and pepper to taste. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 cup grated cheddar cheese. 1/4 cup chopped fresh parsley. 1/4 cup sour cream. 2 slices bacon, cooked and crumbled. 1 green onion, thinly sliced.
Instructions: Preheat grill to medium heat. Slice each potato into 1/4 inch thick rounds. In a bowl, toss half of the potato rounds with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Grill the seasoned potato rounds for about 5-7 minutes per side, or until tender and grill marks appear. While grilling, sprinkle cheddar cheese evenly over the grilled potato rounds. Close the lid of the grill and allow the cheese to melt, about 2 minutes. Remove the cheesy potato rounds from the grill and transfer to a serving platter. Top the cheesy potatoes with chopped parsley and a dollop of sour cream. For the second variation, grill the remaining potato rounds until tender and grill marks appear. Transfer grilled potato rounds to a serving platter. Top the plain grilled potatoes with crumbled bacon, sliced green onions, and another dollop of sour cream. Serve both variations hot and enjoy!
