Ingredients: 4 medium russet potatoes. 2 tablespoons olive oil. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. Salt to taste. 8 small corn tortillas. 1 cup cooked black beans. 1 avocado, sliced. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. Hot sauce optional.
Instructions: Preheat the oven to 400F 200C. Wash and scrub the potatoes. Cut them into thin slices, about 1/4 inch thick. In a large bowl, toss the potato slices with olive oil, smoked paprika, garlic powder, and salt until evenly coated. Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the potatoes are crispy and golden brown, flipping halfway through. While the potatoes are baking, warm the corn tortillas on a skillet over medium heat, about 1 minute per side. To assemble the tacos, place a warm tortilla on a plate. Spread a spoonful of black beans onto the tortilla, then layer with a few slices of avocado, shredded lettuce, baked potato slices, diced tomatoes, and chopped cilantro. Top with hot sauce if desired. Repeat with the remaining tortillas and filling ingredients to make more tacos. Serve immediately and enjoy!
