The not so quick fixes
Nothing beats authenticity, especially when it comes from a page in mothers recipe books that she has hand written down and tucked away in that safe that no one knows the code to! This including my father HA!
One of those is her laksa paste made from scratch; though time consuming but worth every second. I was lucky enough growing up eating it and now trying to replicate it.
I'm one for authentic cuisines and recipes when it comes to de stressing from work and today was one of those days. The pounding of mortar and the churning of the food processor brings up the scents of heavenly blues in the kitchen and this will only take about 15 minutes or so to whip up the paste out of scratch; but once you start frying the paste in a deep wok or pot - the aroma that fills the air is something quite magical. BOOOOOOMM‼️ The joy and memories starts flooding in from right, left and centre. Nothing compares to it and nothing ever will when it comes to mamma’s meals.
