while I love your theory, I wonder but why do they need to resort to a 'false family' when it could be something else?
I read a theory about that also, it’s less believable but still possible
Basically it assumes Nat and Clint have been romantically involved, and it’s the knowledge that comes from that relationship that would allow him to kill her in a personal way as Loki ordered, knowledge she’d only have shared after they were together, her biggest fears and such, so her presence along with those memories triggered his traumatic response to the mind control
so his Tahiti would mean replacing those memories, and putting Laura’s face to the memories he had of his romantic relationship with Natasha (which means their first meeting and friendship would remain intact but he’d lack the triggering knowledge)
Keeping Laura I’d say could be a decision based on the intensity of his feelings for Nat, any attempt to create false memories of break up or death he’d reject, so they opted in keeping her as his wife and the children, I’d say are Laura’s actual children, that they worked into the illusion so she wouldn’t have to be apart from them through the cover up
(there is another explanation for the whole thing that I can’t properly explain since I’m not familiar with comic book clint, but basically it states Laura and the kids are his brother’s family (his brother is dead) that loki’s mind control made him believe were his family, and when nat along with shield tried to break him out of that belief he’d have violent or adverse reactions until they decided it was best to keep the illusion instead of trying to forcefully break him out of it which would be not only difficult and painful but leave one of their best agents inactive for an extended period of time, since Laura agreed to play along and since Clint would mostly be out on missions they decided to let him keep thinking he has a wife and kids and farm)
