ahh I haven't made bread for too long!! also, all my recipes from Denmark need so much more flour here in the US (though the gluten protein is higher in American wheat), I think the flour here in WA is just permanently higher moisture... Interesting that it is different batch to batch - do you think the four comes from different suppliers/places or is it just not consistent?
Part of the bleaching process helps preserve the flour once milled - basically, older grain/flour will absorb less water (meaning your dough will seem very wet with the same amount of water as usual, for anyone trying to follow). The difference is just bigger with unbleached, because it doesn’t last as long. The local miller we use is smaller, and probably has to do a larger number of batches with the same amount of wheat, so there’s a bigger inconsistency between batches. And they’re expensive, so I’m guessing some of the flour has to sit around in storage a bit, in this economy. XD
My experience with European recipes is that the flour in the Americas is vastly, vastly different in terms of water retention, so you’re not alone there.

Haha twelve loaves a day isn’t anywhere near what I used to make at my old job. We had three of us doing... let’s see. Basic red wheat sourdough @ 500g x 80 per week, seed bread @ 1200g x 54 per week, 120 burger buns a week, 12 jumbo loaves of brioche a week (for goddamn breadcrumbs, I shit you not), either 60-90 mini steam buns daily or around 120 small milk bread loaves a week, and 18 loaves of ciabatta a week. And then we put rum baba on the dessert menu.
This was two restaurants sharing 3 bakery/pastry specialized employees.
With one mixer big enough for bread.

Haha thanks! The owner was saying how we need to be updating our social media more, so I’ve been trying to take some videos of me working to put on the instagram account. (I never wear makeup at work and my hair is always a mess so I just... arrange it so my face isn’t in the shot lol)

I always find those first ocs cute in a way? Because they just defy all the rules and are 100% about fulfilling the writer rather than the reader. (And usually they come from younger writers who don't even think about peer approval yet)
MEEEEEEEE TOOOOOOO. I teach high school kids at like, an art school and they are so presh. I want them to just write EVERYTHING. I love it. Because that was me. Minus the “art school” thing. Just flexing my muscles and the thing you know best is YOU, and it’s this perfect pure moment where you’re writing what you want to read and reading what you want to write and like, so important. Solas is the blanket horder lol. Moro produces a lot of body heat so she doesn’t complain too much. But this also results in Solas being the cuddler and trying to sap as much of her heat as possible.
And she sleeps on her back so he has to resort to snuggling so get any sort of extra attention lol

Solas. Moro would never have done so on her own and would have let the relationship continue to wallow in pining and maybes.
In modernAU he brings her flowers when he asks her.
35. Who goes overboard on the holidays?
Moro. She wants the best of everything, she prepares for everything (Solas would have a difficult time taking her on a hiking/camping trip) and wants to be on time for EVERYTHING. So airports are not fun with her around lol
