Ingredients: 2 cups pecan halves. 1 cup pitted dates, soaked in warm water for 10 minutes. 3 eggs. 1/4 cup melted coconut oil. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/4 teaspoon sea salt.
Instructions: Preheat oven to 350F 175C. In a food processor, blend soaked dates until a paste forms. In a mixing bowl, beat eggs and then add in melted coconut oil, maple syrup, vanilla extract, and sea salt. Mix in the date paste until well combined. Stir in pecan halves until evenly coated. Pour the mixture into a prepared pie crust. Bake for 25-30 minutes, or until the center is set and the crust is golden brown. Let cool before serving.
