Enjoy the rich flavors of traditional pecan pie with a Paleo twist! This Slim Palate version replaces traditional pie crust ingredients with nutrient-dense alternatives while maintaining the delicious taste you love.
Ingredients: 2 cups pecan halves. 1 cup pitted Medjool dates. 1/2 cup unsweetened shredded coconut. 1/4 cup coconut oil, melted. 2 tablespoons maple syrup or honey. 1 teaspoon vanilla extract. 1/4 teaspoon sea salt.
Instructions: Preheat oven to 350F 175C. In a food processor, pulse pecans, dates, shredded coconut, melted coconut oil, maple syrup or honey, vanilla extract, and sea salt until well combined and a sticky dough forms. Press the mixture into a pie dish, covering the bottom and sides evenly to form the crust. Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden brown. Remove from oven and let cool completely before filling. Prepare the filling ingredients as desired. Once the crust has cooled, fill it with your favorite Paleo-friendly pecan pie filling. Return the filled pie to the oven and bake according to the filling recipe instructions. Once baked, allow the pie to cool before slicing and serving.
