This Tomato Pesto Prosciutto Tart combines the flavors of ripe tomatoes, fragrant basil pesto, and savory prosciutto on a flaky puff pastry crust. It's an easy and delicious appetizer or light meal.
Ingredients: 1 sheet of puff pastry. 1/2 cup basil pesto. 2 large tomatoes, sliced. 4 slices prosciutto. 1/2 cup shredded mozzarella cheese. Fresh basil leaves, for garnish. Salt and pepper, to taste.
Instructions: Preheat oven to 200C 400F. Place the puff pastry sheet on a baking tray lined with parchment paper. Spread the basil pesto evenly over the puff pastry. Arrange the sliced tomatoes on top of the pesto. Tear the prosciutto into smaller pieces and scatter over the tomatoes. Sprinkle the shredded mozzarella cheese evenly over the tart. Season with salt and pepper to taste. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the cheese is melted and bubbly. Remove from the oven and let it cool slightly before slicing. Garnish with fresh basil leaves before serving.
