A refreshing and fruity cocktail combining the sweetness of plums with the tanginess of apricots, topped off with the effervescence of prosecco.
Ingredients: 2 plums, pitted and diced. 1/4 cup apricot syrup. 1 bottle prosecco.
Instructions: Using a blender, blend the chopped plums until they are smooth. Put the plum puree through a strainer into a pitcher. Pour the apricot syrup into the pitcher and mix it well. Halfway up the champagne flutes, fill them with the plum and apricot mixture. Add a chilled prosecco to the top of each glass. Mix slowly by stirring. Add a plum or apricot slice as a garnish if you like. Serve right away and enjoy!
