Ingredients: 2 cups cooked chicken, diced. 1/2 cup cashews, chopped. 1/4 cup red bell pepper, diced. 1/4 cup celery, diced. 2 tablespoons green onions, chopped. 1/4 cup plain Greek yogurt. 1 tablespoon mayonnaise. 1 tablespoon honey. 1 tablespoon soy sauce. 1 teaspoon sesame oil. 1 teaspoon rice vinegar. Salt and pepper to taste. Lettuce leaves, for wrapping.
Instructions: Put cooked chicken, cashews, red bell pepper, celery, and green onions in a large bowl. Add the honey, soy sauce, sesame oil, rice vinegar, salt, and pepper to a different bowl and mix them together. Add the dressing to the chicken and mix it all together by tossing it.
