Ingredients: 1 lb ground turkey. 1 onion, diced. 1 red bell pepper, diced. 2 cloves garlic, minced. 1 can diced tomatoes. 4 cups chicken broth. 1 tbsp chili powder. 1 tsp cumin. 1 tsp paprika. 1/2 tsp dried oregano. Salt and pepper to taste. 1 avocado, diced for garnish. Fresh cilantro, chopped for garnish. Lime wedges for garnish.
Instructions: Over medium-low heat, brown the ground turkey in a large pot. Slice the onion, bell pepper, and garlic and add them. Cook until it gets soft. Chicken broth, chili powder, cumin, paprika, and oregano should all be stirred in now. Add pepper and salt. Let the flavors blend by simmering the soup for 20 to 25 minutes. Add diced avocado, chopped cilantro, and lime wedges to the top of the hot dish.
