These high-protein, low-carb muesli bars are an ideal, on-the-go snack. Rich in fiber, healthy fats, and protein, they're excellent as a post-workout treat or as fuel for the day.
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup unsweetened shredded coconut. 1/4 cup chopped almonds. 1/4 cup pumpkin seeds. 1/4 cup dried cranberries. 2 tablespoons hemp seeds. 1/4 cup almond butter. 1/4 cup honey or maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/4 teaspoon sea salt. 1 scoop Paleo protein powder.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, combine almond flour, coconut flour, shredded coconut, chopped almonds, pumpkin seeds, dried cranberries, and hemp seeds. In a separate bowl, mix together almond butter, honey or maple syrup, melted coconut oil, vanilla extract, sea salt, and Paleo protein powder until well combined. Pour wet ingredients over dry ingredients and mix until a thick, sticky dough forms. Line a baking dish with parchment paper and press the dough evenly into the dish. Bake for 20-25 minutes or until the edges are golden brown. Remove from oven and let cool completely before cutting into bars. Store in an airtight container for up to a week.
