Tips on preserving items
1: Eggs are another common food wasted- to the horrified look of a friends face last week I used a box of what she claimed 'out of date eggs that need binning ' for omelettes she could not believe when I said I never bother looking at the dates just drop them in a bowl of water and if they float throw them out, if not they are fine to eat!
2: Put bread in the fridge after a couple if days if not used and use for toast, and gave a top shelf in the fridge for "use up"items.
3: Taste and smell are the best guides to deciding whether your food its past its best.
4: Meat or fish near use by date goes in the freezer and left overs from meals literally go to the dogs! Squashy tomatoes and left over peppers go in freezer for sauces and soup, (a cheap liquidiser is a great investment for this) fruit gets used in smoothies, desserts etc. But you've got to be vigilant in checking your fridge every couple of days, otherwise stuff hidden away on the back of shelves gets forgotten.
5: If you have a garden, have lots of extra tomatoes or just want fresher tasting tomatoes year round for stews, chili, sauces, etc, here's what my grandma did. Bring a pot of water to boiling. Drop in a few tomatoes and boil them just until the skin looks loosened a bit. Remove with tongs, grab the skin and it should peel off easily. Put peeled tomatoes on a cookie sheet and freeze them. When frozen, drop them into large freezer bag and return to the freezer. Then you can use what you need during the winter. I do this with my garden tomatoes, and the flavor is better than canned.
6: I always freeze my bananas when they go brown , I leave them whole then run them under cold water for easy peel , makes a great ice cold smoothie any time.
