Ham, Cheese, and Dandelion Greens Puff Pancake
@busridetohelheim I played with your recipe and used it as a blueprint for a savory pancake. It kinda reminded me of a crustless quiche!
Story
Whenever I go on a trip, I always go to where the best pancake are.
I love pancakes. I often invite my friends home and say, ‘Let’s have a pancake party!
This is one of my favorite pancake recipes.
Ingredients
2 cups flour
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 + 1/2 cups milk
1/4 cup butter
2 teaspoons vanilla extract
1 large egg
Maple syrup
Fruits (Blueberry, strawberry, banana)
Almond
Whipping cream
Method
Mix together the flour, baking powder, sugar, baking soda and salt in a bowl. Then, add milk, vanilla, melted butter, and egg. Mix together until smooth. Preheat non-stick pan.
When it started to hot, lower the heat down. Cover the pan with butter to prevent it from sticking. Keep cooking until it turns golden brown color, and when bubbles start forming on top, you can flip.
Serve with maple syrup, fruit, almond and whipping cream.

I used whole-wheat flour, Unsweetened Almond Milk, and “I Can’t Believe It’s Not Butter” Light. With these swaps and with 1/2 tablespoon of fruit preserves, each pancake muffin is only 73 calories!!

Puffed pancakes, get in my mouth
2 eggs
1/2 cup milk
1/2 cup flour
dash of salt
dash of cinnamon
1 tablespoon butter
preheat oven to 425 degrees.
whisk together the eggs, milk, flour, salt and cinnamon in a bowl.
while the oven is preheating, melt the butter in a pie pan or 9 inch square pan.
pour the batter into the hot melted buttered pan.
bake 10-12 minutes (or until the pancake is firm and has puffed around the edges).
the pancake will shrink down a bit after coming out of the oven (that's ok.) serve right away with lemon juice, powdered sugar, maple syrup, or fruit.
