Vegan Mushroom Chicken Vol Au Vent . . Filling ingredients: - Vegan chicken strips, cooked according to packaging instructions (suggestion: @gardein ) - 3 Tbsp vegan butter (suggestion: @earthbalance ) - 2 cups mushrooms, sliced 🍄 - 1/2 cup broccoli, finely chopped - 4 Tbsp flour - 1 & 1/4 cups almond milk (more if needed) - salt and pepper to taste . . Directions: 1) Melt the butter in a skillet over medium heat. Stir in mushrooms and broccoli. Cover and cook for 2 minutes. 2) Stir in the flour, one tablespoon at a time. Cook for 1 minute. 3) Slowly stir in the almond milk. Bring to a boil then lower to simmer for 2 minutes. 4) Mix in chopped vegan chicken. Season with salt and pepper. . .
