The final plate was boring, but here it is anyway. 😝 Pulled pork stuffed whole zucchini with @meatchurch pulled pork seasoned with Dia De La Fajita, rice, roasted Anaheim pepper, cilantro, red onion, white & yellow corn and some queso fresco cheese. Used some maple for smoke. This took much longer than I thought. I cooked this stuffed zucchini at 250 for 2 hours until it was fork tender. Added some queso fresco at the end. Here's the inside of the stuffed zucchini. As you can see towards the middle, it didn't cook all the way through. It was just way too thick. The filling tasted pretty good, but needed more salt or rub and maybe some cheese.
