Made some pumpkin coffee creamer from scratch tonight. Topped it off with some whipped cream. I'm so ready for spooky season 👻🎃
RECIPE
• 1 1/2 Cups Heavy Cream (can sub for milk or non-dairy equivalent of choice).
• 1/4 cup Sugar/Sweetener (can add more or less to taste).
• 1/4 Cup Pumpkin Puree.
• 1/2 tsp of Cinnamon.
• 1/4 tsp Nutmeg.
• 1/4 tsp Allspice.
• 1/4 tsp Clove.
- Add everything into a small saucepan, on med-low heat.
- Bring to a gentle simmer (you should bairly see the beginnings of bubbles forming. Continue to heat an additional 5 minutes (do not leave unattended and stir constantly).
- Remove from heat and let cool. Add creamer to a jar or tightly sealed container that can easily be poured from.
- Enjoy! ☕️🎃
TIPS
This recipe will mostly fill a 16oz/500mL Mason jar. Be sure to write the expiration date of your cream/dairy replacement on the jar. Remember that the pumpkin will ALSO go off and possibly go bad before some non-dairy options.
To ensure you don't waste the pumpkin, if you only plan to use it for this recipe, measure and freeze the rest of the can in the 1/4 cup portions so nothing goes to waste.
The finished creamer should technically be freezer friendly as well. But note that the type of sugar or sweetener you use, and how MUCH you use, may affect its ability to freeze solidly (more sugar content means a softer freeze, learn from my mistakes with another recipe before I made my own lol).
