Continuing on the healthy pumpkin hype train leading up to Fall I made some stovetop pumpkin oatmeal! I'm so impressed with how this turned out and how easy it was to make.
1/3 Cup stovetop oats (I used Roger's porridge oats and ancient grains)
1 Cup unsweetened almond milk (or water if you'd prefer)
2/3 Cup canned pumpkin
1/2 Scoop of vanilla protein powder
Dash of cinnamon
Dash of all spice
Dash of nutmeg
1 Tsp of agave to sweeten (optional)
Stir together continuously in small pot on low/medium heat until oats are cooked through (adding more almond milk or water if necessary)
Top with your favourite sprinkles such as pumpkin seeds, flax seeds, raisins, or chia seeds
