Ingredients: 2 cups rolled oats. 1/2 cup pumpkin puree. 1/4 cup maple syrup. 1 1/2 cups milk. 1 teaspoon vanilla extract. 1 teaspoon pumpkin pie spice. 1/4 teaspoon salt. 1/4 cup chopped pecans optional.
Instructions: Grease the slow cooker insert with cooking spray. In a mixing bowl, combine rolled oats, pumpkin puree, maple syrup, milk, vanilla extract, pumpkin pie spice, and salt. Mix well. Pour the mixture into the greased slow cooker insert. Sprinkle chopped pecans over the top if desired. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the oatmeal is set.
