The beverage made from fermenting honey in water is Mead. A Mead made with grapes or grape juice is called a Pyment. So, I'm planning to make a pyment using white grape juice, about half a pound of golden raisins (for extra complexity and body), and honey. I'm going to shoot for about 16% alcohol by volume, and I want it to finish with a semi-dry level of sweetness. While I won't know exactly how much honey to use until I can measure the sugar in the juice and raisins, I'm estimating it will take about 3 1/2lbs.
The QA23 wine yeast is a Portuguese white wine yeast. Go-Ferm and Fermaid-O are types of yeast nutrients to help with fermentation.
