In my experience, realism for the sake of realism isn’t always all it’s cracked up to be. Pretty much every mechanic you have is going to be a simplified abstraction that sacrifices some amount of realism for speed and ease of use. So, I’d look at this not in terms of realistic vs unrealistic, but rather more vs less detail. The solution could be to figure out how much detail you need in order to create the player experience you desire.
Games like Shadowrun (for example) give you a dozen different combat skills because they experience they provide is really focused on the nuances of battle. The game wants you to feel like a professional criminal who takes care to always choose the right tools for each mission, so knowing which types of weapon you’re skilled with is pretty important. Games like the World of Darkness, on the other hand, care more about making you feel like a modern day monster with powers that set you apart from humanity, so they pay less attention to skills like using guns or swords. When you play them, both types of game generally feel sufficiently realistic in their treatment of combat skills because they each give you all the detail that their intended experience requires.
(Heck, I’ve seen games where your only combat stat is “do you have a gun, yes or no?” that worked just fine.)
For choosing how detailed the game’s weapon skills should be, think about what you want your players to feel like while they’re playing this game, and consider how much attention they’re paying to stuff like weapons and equipment. How does additional detail here contribute to the overall player experience? Is it an important part of this experience that characters who wield an SMG play differently than ones that use a shotgun? Do you want to put enough detail into your combat system such that the difference between the two weapons can feel meaningful?
As a general rule, you want your game system to have as little detail as possible to deliver the experience it’s meant to provide. That way, you get the most bang (player satisfaction) for your buck (effort invested, both by you as designer and by potential players). So, overall, I’d suggest getting a clear idea of what kind of game experience you want to provide, and then cutting down (or out) anything that doesn’t contribute to it.
