Stuffing Pork in Honor of the Compton Cafeteria Riots
For the most part, we've all heard of Stonewall and know of its contribution as a start of the Queer Rights Revolution, right? But how many people also know that there were events that preceded Stonewall and were great instances of Queer People standing up for themselves?
Of the others that we know of, The Compton Cafeteria Riots deserve their moment of recognition.
Gene Compton's Cafeteria, located in the Tenderloin District of San Francisco, was known to be a popular cite of Trans people and Drag Queens due to the transphobia in Gay bars and laws against Cross Dressing. Many sex workers would use the Cafeteria as a safe space to meet and congregate, especially after hustling but due to its notoriety, the Cafeteria would often times get raided by the Police.
While the exact date is not know, it was written that it happened on a Hot Night in August 1966 when a Trans Woman resisted arrest and threw coffee at a cop resulting in people taking to the street to protest, the damage of a cop car, and the burning of a sidewalk newsstand.
The following day, after being denied entrance to the Cafeteria, Trans People, Hustlers, Tenderloin Street People, and other members of the LGBTQ community took to the street to picket Compton's Cafeteria and after a decline in business, Compton's closed in 1972.
In 2017, the City of San Francisco recognized the Compton's Transgender Cultural District, the worlds first Transgender District.
So in honor of our pig fighting elders, we decided to honor them by putting together a delicious
Stuffed Pork Tenderloin
Ingredients
One 1 ½ lb Pork Tenderloin
2oz Cremini Mushroom (about 4-5) small diced
2 ½oz Spinach
5oz Herbed Creamy Goat Cheese
2oz Sundried Tomatoes (drained/rough chopped)
3 Large Cloves of Garlic
1 tsp Butter
1 tbsp oil
2 tsp Garlic Powder
2 tsp Onion Powder
Salt and Pepper (to taste)
AP Flour (about ½ cup) for breading
Bread Crumbs (about ½ cup) for breading
3 eggs (beaten) for breading
Oil for Frying.
Saute the Mushrooms over medium/high heat with the butter and oil until the Mushrooms become a bit translucent and brown.
Add the chopped Garlic and saute until the garlic also begins to brown.
Add the Spinach slowly until wilted and incorporated followed by the garlic and onion powder and stir until combined adding salt and pepper to taste. Remove from the heat and leave to chill.
Once the Spinach, Garlic, and Mushroom mixture has cooled, combine with the Herbed Goat Cheese and Sundried Tomatoes.
Preheat the oven to 365 Degrees.
Roll Cut the Pork Tenderloin and spread the filling across the cut side. Roll back to create a pinwheel.
Gently roll the filled tenderloin, first in the flour, then in the beaten eggs, and finally in the bread crumbs making sure that it is coated well at every step before proceeding to the next.
Pan Fry the Breaded Tenderloin over medium/high heat until all sides are golden brown all over.
Remove from the pan and finish cooking it off in the oven for another 6-10 minutes depending on the thickness.
Remove from the oven and allow it to sit for 5 minutes.
