mechanics-wise, i'd say either the lao shan lung fight from MHGU or the ahtal-ka fight from MHGU (both really interesting and use the environment a lot), but if we wanna go for one that i enjoy for mechanics, music AND just the way the bossfight goes, estuary namaah from rogue legacy 2.

might be obvious from my most recent liveblogging, but sa2. i just cannot wrap my head around what people enjoy so much in it. every time i try to find things people enjoy, i just find more things to hate in it. but hey, maybe that'll change in dark story. maybe it won't at all.
