These banana pancakes only need three ingredients and are quick, easy, and tasty. You can eat them for a healthy breakfast or brunch.
Ingredients: 2 ripe bananas. 2 large eggs. 1/4 teaspoon baking powder.
Instructions: Peel and mash the ripe bananas in a mixing bowl until smooth. Add the eggs and baking powder to the mashed bananas. Mix until well combined. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until you see bubbles forming on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. Remove the pancakes from the skillet and serve warm. Optional: Top with maple syrup, sliced bananas, or your favorite pancake toppings.
