Create your own V8 juice at home using fresh herbs and vegetables that is Paleo-friendly. This homemade version is a refreshing and healthful choice because it is devoid of preservatives and additives.
Ingredients: 6 ripe tomatoes. 2 medium carrots, peeled and chopped. 1 red bell pepper, chopped. 1 cucumber, peeled and chopped. 2 celery stalks, chopped. 1/2 small beet, peeled and chopped. 1 clove garlic, minced. 1/4 teaspoon black pepper. 1/4 teaspoon sea salt. 1/2 teaspoon dried basil. 1/2 teaspoon dried oregano. 1/4 teaspoon cayenne pepper adjust to taste. Juice of 1 lemon.
Instructions: To make blending easier, wash and chop all the vegetables into smaller pieces. Add the tomatoes, carrots, cucumber, celery, beet, red bell pepper, and minced garlic to a food processor or blender. Blend until well combined and smooth. To the blender, add the dried oregano, dried basil, dried black pepper, and cayenne pepper. Repeatedly blend until every ingredient is thoroughly combined. If necessary, adjust the seasonings by tasting the mixture. To get rid of any last bits of solids, strain the juice into a big pitcher using cheesecloth or a fine-mesh strainer. Pour the lemon juice into the pitcher and mix everything together. To allow the flavors to mingle, place the Paleo V8 juice in the refrigerator for at least two hours before serving. Enjoy and serve cold!
