Simple Chicken Marinades - Flavorful & Easy Recipes
I love chicken tenders. Primarily because they do really well with a quick marinade, and cook fast. I marinate a package of tenders in lemon, minced garlic (I go heavy on the garlic) crushed red pepper, olive oil, a little honey, cilantro (rosemary, thyme, or tarragon works well) salt and pepper. Let the tenders marinate for 20-30 minutes (or an hour if you are patient). In a large pan, add canola or peanut oil (any oil with a high smoke point), and let the pan get hot. You want to hear a sizzle when you add the chicken. Cook one side for 3-4 minutes or til you see the edges of the chicken tenders darken (that’s how I know it is time to flip). Cook the other side for 2-3 minutes and you are good to go. KEY TO THIS DISH: Caramelization. Getting good color on the chicken turns it from good to great! The honey helps with this process. A package of chicken tenders always lasts me two meals... unless I make fried rice, then it lasts me three meals... Hmmm, wonder what my next post will be... See you soon.
