The versatile nature of the product makes it easy to customize any quiche by adding vegetables, meat, seafood or even other cheeses. If you’re feeling creative, you can even cook up a plate of hors d'oeuvres, strata or a signature frittata - the choice is entirely up to you!

Zuke Quiche

This works on so many levels:  portion control, portability, prep time, and palate pleaser.  It also works with my diabetes diet!

1/2 c. whole wheat flour

2 t. baking powder

1 t. kosher salt

1/2 t. pepper

1 c. zucchini, shredded,

1 lg. onion, chopped fine

1 c. Parmesan cheese, shredded

6 eggs, whisked

1/4 c. basil, fresh, chopped fine*

3 T. olive oil

*Use kitchen scissors to speed this step.

Preheat oven to 375 degrees.  Grease a muffin pan.  In a large mixing bowl, combine flour, baking powder, salt and pepper.  Add the rest of the ingredients, stir.  Spoon into muffin pan.  Bake for 15 min. or until a toothpick inserted in the center comes out clean.
