Zuke Quiche

This works on so many levels: portion control, portability, prep time, and palate pleaser. It also works with my diabetes diet!
1/2 c. whole wheat flour
2 t. baking powder
1 t. kosher salt
1/2 t. pepper
1 c. zucchini, shredded,
1 lg. onion, chopped fine
1 c. Parmesan cheese, shredded
6 eggs, whisked
1/4 c. basil, fresh, chopped fine*
3 T. olive oil
*Use kitchen scissors to speed this step.
Preheat oven to 375 degrees. Grease a muffin pan. In a large mixing bowl, combine flour, baking powder, salt and pepper. Add the rest of the ingredients, stir. Spoon into muffin pan. Bake for 15 min. or until a toothpick inserted in the center comes out clean.
