Quick Raw Salad with creamy Yellow Squash Persimmon dressing/dip
Quick Raw Salad full of deliciousness! First I wipped up a healthy dressing/dip in my vitamix then placed it in the center of my plate. Then nicely arranged some shredded carrots, beets, chopped cabbage and spinach. I sprinkled some soaked sunflower seeds on top and sprinkled on a touch of mustard powder. Once I started eating it I mixed it all together! So good!
Dressing Ingredients:
1/4 cup soaked sunflower seeds
1/2 very ripe Persimmon
1/2 peeled yellow squash
1 celery
1 pitted date
1/4 squeezed lemon juice
Add a little water! Start with a few tablespoons until it starts to blend and is to a creamy consistency.
