Ingredients: 1 cup quinoa, cooked and cooled. 1 cup dates, pitted. 1 cup nuts e.g., almonds, walnuts, chopped. 1 cup shredded coconut, plus extra for coating. 1/4 cup maple syrup. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a food processor, combine dates and pulse until finely chopped. Add quinoa, chopped nuts, shredded coconut, maple syrup, vanilla extract, and a pinch of salt. Process until the mixture comes together. Scoop out tablespoon-sized portions and roll into balls. Roll each ball in shredded coconut to coat evenly. Place the coconut-coated balls on a parchment-lined tray and refrigerate for at least 30 minutes to set. Serve chilled and enjoy!
