These vibrant Rainbow Ice Popsicles are a delightful treat for both children and adults. With layers of colorful fruits and creamy coconut milk, they are not only visually appealing but also bursting with refreshing flavors.
Ingredients: 1 cup coconut milk. 1/4 cup granulated sugar. 1/2 cup strawberries, chopped. 1/2 cup mango, chopped. 1/2 cup kiwi, chopped. 1/2 cup blueberries. 1/2 cup pineapple, chopped.
Instructions: Mix sugar and coconut milk in a small saucepan. Warm it over medium-low heat until the sugar is gone. Wait for it to cool down. Layer chopped fruits in a rainbow pattern on top of each other in popsicle molds: red for strawberries, orange for mango, yellow for kiwi, green for blueberries, and blue for pineapple. Fill each mold all the way to the top with the cooled coconut milk mixture. Pour it over the layered fruits. Put the popsicle sticks into the molds and freeze them for at least four to six hours, or until they are completely frozen. Run warm water over the outside of the molds for a short time to loosen them up and take the popsicles out of them.
