Instructions: Preheat the oven to 400F 200C. In a large bowl, toss potato wedges with olive oil until evenly coated. Sprinkle Parmesan cheese and ranch dressing mix over the potato wedges, tossing to coat thoroughly. Spread the coated potato wedges in a single layer on a baking sheet lined with parchment paper. Season with salt and pepper to taste. Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy, flipping halfway through cooking time.
