Apparently, Japanese dormice share a species group with two different species of dormice that both have ‘edible’ in their official names
I imagine him accidentally coming across this information in a library after hearing a bunch of jokes about it, and getting very confused and/or alarmed, especially given that he is already very paranoid about Flower Hill.
That, or someone else finds the information and might get curious and try to eat him.

I did promise some people that I would draw Jollin interacting with technology like computers or phones, so this could be a good background for a fun short story or a few panels.
