PHO NOODLE SOUP (cooked vegan) Am having a pho-nomenal time doing my Authentic Vegan Vietnamese coursework at @veecoco_academy thanks to @rosekitchenhanoi. You might have seen me mention that I’ve learnt to make vegan fish sauce from pineapple which I used in the steamed eggplant with ginger sauce dish in my previous post. This pho noodle soup also requires the use of vegan fish sauce so I’ve included how it looks like in this pix. Pho is one of my favourite Vietnamese dishes and I’m so happy that I’ve learnt how to make the authentic version from Oni. There are loads of recipes out there but most of the vegan pho recipes are not developed by a native Vietnamese so it might not be as authentic. It was worth waiting for the soup stock to boil for one hour. 😋 I thought I had bought some fresh beansprouts from the wet market but somehow there wasn’t any in my bag when I got home. Anyways, pho-sure I’ll be making more of this Pho Noodle Soup coz resistance is pho-tile.
