so i'm making home-made healthy fruit gummies this weekend in little heart and whale and flower shaped moulds and here's the recipe!!
Ingredients:
Fruit Puree: 180g (Strawberries, Blueberries & Orange or other desired fruits)
Medjool Dates: 40g (Pitted & soaked)
Honey: 50g
Cold Water: 60g
Unflavored Gelatin: 50g
Lemon Juice: 10g
Instructions:
1. Bloom: Sprinkle gelatin over cold water. Let it sit for 10 mins until it’s a thick sponge.
2. Blend: Combine fruits, dates, honey, and lemon in a blender or processor until completely smooth.
3. Simmer: Heat puree in a pan on low for 5 mins to concentrate the flavor.
4. Melt: Remove from heat, add the gelatin sponge, and whisk until melted.
5. Set: Fill molds and chill for 2 hours in the fridge.
6. Pro Tip: Leave them to air-dry on the kitchen counter over the days you eat them for maximum chew. We kept the whole fruit pulp and added dates. This keeps the fiber intact, which helps slow down the absorption of the natural sugars. No blood sugar spikes and crashes, just sweet treats!
