Hunter's Moon sorry actually it's bread
i've been enjoying cracked wheat and red wheat in my bread again lately and upped their proportion somewhat
this one started last night, too late to bake so i tossed it into the fridge and forgot about it until about noon
took it out of the fridge, fed the cats and then completely forgot about the dough again until this evening
when i'm like oh shit because it's basically done a bunch of rising with no folding and i had no idea if it had more rise left in it and also it was kinda sticky
i folded it a couple times to get some shape to it and crossed my fingers... it did rise some; i didn't want to chance either over rising (ie running out of steam, not that it would get too big) or... forgetting about it yet again, so i baked it
it's a little denser than desired and denser than my recent loaves but it's still fully in the edible category as far as texture is concerned
and the flavor is really really good, i just cut a slice for dessert 😋 and had a bit of unsalted butter with it
