Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tablespoons unsweetened cocoa powder. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. 1 tablespoon red food coloring. 1/2 teaspoon peppermint extract. 1/2 teaspoon white vinegar. 1/2 teaspoon baking soda. 1/2 cup crushed candy canes for garnish. 1 batch cream cheese frosting homemade or store-bought. Green food coloring optional, for frosting. Additional candy canes for decoration optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the cocoa powder, baking powder, salt, and flour together in a bowl using a whisk. Put away. Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. In a small bowl, mix the red food coloring and buttermilk together. Add the peppermint extract to the buttermilk mixture and mix it well. Mix the baking soda and white vinegar in a small cup. Let it fizz for a moment, then add it to the batter quickly and mix it in. Slowly add the dry flour mixture to the wet ingredients and mix just until everything is combined. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. First, let the cupcakes cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Make the cream cheese frosting after the cupcakes are cool. For a festive touch, you can color the frosting green if you want to. Spread a lot of the cream cheese frosting on each cupcake, and then decorate the tops with crushed candy canes.
