Ingredients: 2 lbs short ribs, boneless and thinly sliced. 1 cup red wine. 1/4 cup soy sauce. 2 tablespoons olive oil. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 cup broccoli florets. 1 cup snap peas. 1/2 cup carrots, julienned. 1 tablespoon cornstarch. Salt and pepper to taste. Cooked rice or noodles for serving.
Instructions: In a bowl, combine the red wine and soy sauce. Add the sliced short ribs and marinate for at least 30 minutes. Heat 1 tablespoon of olive oil in a large skillet or wok over high heat. Remove the short ribs from the marinade and sear them until browned. Remove and set aside. In the same skillet, add the remaining olive oil and saut the onion and garlic until fragrant. Add the red and green bell peppers, broccoli, snap peas, and carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp. Return the seared short ribs to the skillet with the vegetables. In a small bowl, mix the cornstarch with a bit of water to create a slurry. Pour it into the skillet to thicken the sauce. Pour the remaining marinade over the stir-fry and cook for an additional 2-3 minutes until the sauce thickens and the short ribs are fully cooked. Season with salt and pepper to taste.
