There is a surprise Reese's Peanut Butter Cup in the middle of these delicious Banana Bread Muffins that takes them to the next level. Just right for people who like peanut butter and bananas!
Ingredients: 1 1/2 cups mashed bananas about 4 ripe bananas. 1/2 cup granulated sugar. 1/4 cup unsalted butter, melted. 1/4 cup creamy peanut butter. 1 egg. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 12 Reese's Peanut Butter Cups, unwrapped and frozen.
Instructions: Start by heating the oven to 350F 175C. You can line a muffin tin with paper liners. Mash the bananas and add sugar, melted butter, peanut butter, egg, and vanilla extract to a bowl. Mix everything together well. Mix the flour, baking soda, baking powder, and salt together in a different bowl. Mix the dry ingredients into the banana mixture just until they are mixed in. Do not mix too much. Put about half of the banana bread batter into each muffin tin. In the middle of each muffin cup, put a frozen Reese's Peanut Butter Cup. Add more batter to each muffin cup until they are about three quarters full, making sure the peanut butter cups are covered. Put the muffins in an oven that has already been heated for 20 to 25 minutes, or until a toothpick inserted into the middle comes out clean. For a few minutes, let the muffins cool in the pan.
