A tasty and refreshing potato salad with lots of colorful vegetables and a sour dressing.
Ingredients: 4 potatoes, boiled and diced. 1 cup diced carrots. 1 cup diced cucumber. 1/2 cup diced red bell pepper. 1/4 cup chopped green onions. 1/4 cup chopped parsley. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 2 tablespoons apple cider vinegar. Salt and pepper to taste.
Instructions: Boil the potatoes and cut them into dice. Add the carrots, cucumber, red bell pepper, green onions, and parsley to a large bowl. Mix the Dijon mustard, apple cider vinegar, salt, and pepper in a small bowl with a whisk. Add the dressing to the potato mix and gently toss until everything is well mixed. Put it in the fridge for at least 30 minutes before you serve it. If you want, add more parsley as a garnish before serving.
