The settings are a bit hidden, but there are ways to remove Gemini from your favorite Google services.

tl;dr go to gmail settings > all settings > general > smart features > MANAGE SMART FEATURES (not just the smart ft button) > turn off

sharing this bc my google docs decided to inject gemini into my writing and i do not stand for that. remember to also submit feedback to google saying you want this to be gone !!
