Gazpacho !!! Great healthy option for a lunch, it is a famous Spanish cold tomato soup, so delicious and refreshing for summer ☀️ Here you can see my own recipe, there are plenty of versions. Ingredients (1 person) 2 large tomatoes, a small portion of onion and another of red pepper (the portion depends on how much flavour of those you would like) 50ml Olive Oil, 30ml Vinegar and a pinch of salt. Blend all together until get a good texture. Let cool for a while in the frieze or just blend some ice into the mix. Add some protein on the top: 1 boiled egg and some chopped turkey. You could also replace any of those for some tuna, salmon or any type of protein that you like.
