Lunch and dinner taken care of, but what about breakfast? Well I like to eat granola, yogurt and fruits. More on my breakfast later this week, but for now let's talk about granola! Why eat all the expensive store bought, chemical infused granola for breakfast when you can make a healthy one at home!
Things you need:
(1) 1 cup of oats; (2) 1 cup of pecans; (3) 1/4 cup brown sugar; (4) 1/4 cup pumpkin seeds; (5) 1/4 cup sunflower seeds; (6) 1/2 tsp salt; (7) 1 tsp cinnamon; (8) 1/4 cup olive oil (or vegetable oil); (9) 1/4 cup honey (or maple/agave syrup); (10) Dried cranberries; (11) Chia seeds;
Process:
Mix all the dry ingredients, except for the cranberrie and chia seeds, together in a bowl. In a separate bowl add the oil and honey and stir well. Add the oil and honey mixture to the dry ingredients and stir to incorporate all the ingredients together. This should give you a sticky but crumbly product. Preheat oven at 350 Fahrenheit for about 30 minutes, stirring every 10-15 minutes. Adjust the time according to your oven. When you take your baked granola out of the oven it should be golden brown and smelling deliciously sweet! Let it cool down and add the cranberries and chia seeds according to your taste and liking.
This crumbly deliciousness can always be modified according to your taste. If you don't like something I have added to the granola, you can easily replace it with an ingredient you prefer or just skip the ingredient. You can also add more ingredients to this recipe but keep in mind that when you are adding more dry ingredients you must adjust the amount of wet ingredients to get the proper texture of the granola and vive-versa.
It tastes so good, I can eat it just by itself. But in the morning after a nice run, I feel like there is nothing more filling than a healthy hearty breakfaast that you made at home!
