You don't need flour to make these gluten-free and dairy-free banana bread bars. They taste great for breakfast or as a snack. They're simple to make and taste great because the bananas are ripe and sweet.
Ingredients: 4 ripe bananas. 2 cups rolled oats gluten-free. 1/4 cup honey or maple syrup. 1/4 cup almond butter or other nut/seed butter for dairy-free. 2 eggs or flax eggs for vegan option. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp salt. 1/2 cup dairy-free chocolate chips optional.
Instructions: Preheat your oven to 350F 175C and grease a 9x9-inch 23x23 cm baking pan. In a mixing bowl, mash the ripe bananas until smooth. Add the rolled oats, honey or maple syrup, almond butter, eggs or flax eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well to combine. If desired, fold in the dairy-free chocolate chips. Pour the mixture into the greased baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
