it's been so long since it's come out so probably no one will care about this but I know exactly where Stan Lee would've had a cameo in Spider-Man No Way Home. It would've been in that scene where Peter is running from Strange in the Mirror Dimension and right when he passed through that mall it would've cut to Stan-Lee finding Peter's Spiderman mask after he drops it running around that department store, then it cuts to him hassling a cashier as Peter and Strange continue on around him, before it shows the mask being zipped off his face and him being outraged and shaking his fists. this would also play perfectly into the theory of him being an interdimensional being. either that or him being a frustrated custodian at the statue of liberty battle but they already did custodian.
