Pan-fry Pacific Saury
Makes 2 servings. Preparation time: 8 minutes. Cooking time: 10 minutes. Pacific Saury (also known as "Sanma" or mackerel pike) is a common dish in Japan. It is normally grilled and served with some vegetables and rice. Since the oven in my apartment is not working properly, I decided to cook it on the pan. This particular of fish is recommended (especially for pregnant women) due to the low risk of mercury and high level of protein. In addition, it's also listed as a sustainable source for sushi. What I like about this dish is that it takes less than 15 minutes to cook and serves as another great alternative whenever I crave for a quick and easy seafood. The only place that sells fresh sauries so far is the Asia Food Market at Brighton Henrietta Townline Road. A frozen pack can also be found in a Korean grocery store, at Henrietta Townline Plaza, for $6. Ingredients:
- 1 pacific saury. - Rosemary leaves. - 1 1/2 tablespoons of virgin olive oil. - Ground black pepper. - Minced garlic. - Iceberg lettuce. Directions: 1) Thaw the fish and wash it throughly, before slicing it to pieces. 2) Marinate the fish with ground black pepper.
3) In a medium / large skillet, preheat oil over medium fire. 4) Add in the minced garlic and sauté them for 3 minutes. 5) Place the sliced fish into the pan and allow it to be cooked by flipping each side continuously. 6) Sprinkle rosemary leaves and leave to stand for 2 minutes.

Looking Back on my Blog
Hello comrades, So my school year is almost wrapped up, and I must say, it's been quite a ride. Not necessarily in a good way. But it's been a trip. I started this blog initially not knowing if I'd take to it. My original idea for a blog was a lot more ambitious. I was going to photograph food in some of the on-campus vending machines, then eat it on an empty stomach and monitor the side effects. I was hell bent on this project for a good number of weeks before I was persuaded that such an undertaking would be bad for my health. So I decided to take the opposite route and try to diet. This quarter, however, I met with mixed success. I couldn't really lose weight. This was probably my worst quarter, academically and otherwise. So I couldn't really commit because I was too stressed out most of the time, and my plans would either be derailed by events outside of my control or be abandoned when I lost motivation. This being said, I still had fun dieting. I managed to cut myself off from some bad habits that had been sapping away at my health- like drinking Mountain Dew and boozing out. I've also tried to quit eating fried food, but I have yet to fully commit to this. Ultimately, I think I'm going to continue posting to this blog over the summer. Just because my class is ending doesn't mean my diet is immediately going to become null and void! I do want to get healthier, and now that I've gotten into the swing of blogging, it's getting pretty contagious! So I should have a new post up sometime next week. I might lower my posting to just one post per week, or I'll try to fire off two per week. We'll see how it goes. Thanks for reading, everyone! I hope you continue to follow my adventures.
Matte Manicure
Hey everyone! Today I wanted to talk about the new matte trend. It is such an easy way to switch up your normal manicure while still being simple and quick to do.
A matte manicure can be either simple or you could get fancy and do some nail art as well. I chose to keep it simple because it's almost finals week here and time seems to be very limited between papers, tests and assignments.
To do this mani all I did was paint my nails with the black polish, Midnight in NY. I did two coats of that and then let it dry for about 15 minutes. Then, instead of using a regular clear top coat I used this Revlon matte top coat polish. It is as simple as that!

Letter to myself
Dear Wondrous Mind... dear Madeline, Well the end is near for this journey, at least for course credit it is. But though our time together is coming to an end, our journey is still not over. I've learned a lot about life, the world, and myself over the past ten weeks. You may find it strange when I say it, but you, my blog, have taught me more about life than any compilation of words, posts, videos or pictures could explain.

I have learned that as we grow up we realize that life is not perfect and perhaps we are not as functional as we once thought. Sometimes it is the things that make us less functional, less perfect, and most scared, which direct us to the things that make us happy. And through your weeks, I have learned just that. For each tear, each moment of anxiety, and every chance to escape from fear, reminds me of my goal (set up through you), to achieve happiness. With you, we have ventured to yoga classes, made tea, searched for relaxing products, and even bought a bunny. Together we have gone out into this strange world searching for things to make us happy. Sure these "things" were exciting and made us happy, but how long could 12 tea bags last, 16 pieces of gum stay flavorful, and a bunny stay so sweet and innocent? It was a matter of time before these events were over, gone, or grew up, to which we realized we needed something else to make us happy. So we detoxed and bought a dog, and even ate granola bars searching for similar results. Of course these worked. But they too came and went. Now, looking back, we sure did stumble over the best stress management, reliever, and voice of all time; ourselves. There is no food, no drink, no pet, or no practice that can fully make us happy. Sure these things all help, and perhaps the past statement contradicts all that I have posted within your walls, but there is nothing as sweet as self-satisfaction. I told you from day 1 what my mom said, "you dictate your own happiness." It was our voice and our life which we once complained about, felt anxious by, and even overwhelmed, but through the weeks we've learned to find our happiness within. I appreciate our journey and those who have been along for the ride. Yes I learned how to manage my stress, but what I learned most of all was myself. until next time... -m

I made Rilakkuma Omelette Rice yesterday to experiment with food designs. Omelette rice is very common in Japan and it can be served as another quick meal for lunch or dinner. The word Rilakkuma means relax for "Rilak" and bear for "kuma". I had a lot of fun making this even though it's my first time. A video tutorial will be up soon. So stay tuned!!
