Mexican night! Steak fajitas but not actually steak... beef topside marinaded all day for some pizazz to a roast. I marinaded with lime juice, smoked paprika, garlic and coriander and cumin. Roasted with baby aubergines, sweet potato (for these crazy animals who haven’t stopped moving all week) and olive oil. I made flaxseed and egg ‘tortilla’ for the wraps, served with mango salsa, soured cream, cheese and jalapeños. For the wraps it’s 3 eggs, 3 egg whites, handful of flax and handful of grated Parmesan. Blend to make a batter- use coconut oil in a non stick pan and make a thin crepe style pancake wrap.
