Today's lunch is super easy and simple. Make a batter with 1/2 cup lentil four and 1/4 cup buckwheat flour and water, whisk. Ad a little salt. Put some batter in the centre of a hot, non-stick frying pan, no oil! Lift the side of the pan and keep moving it, ensuring the batter is evenly distributed in the frying pan. Once the batter is completely set, carefully try to remove the edges of the pancake and check if it's easy to lift it off the pan yet. If not, it needs a bit more cooking. Once it's easy to flip over, one side is cooked. Brown the other side and put on a plate. Repeat with remaining batter. Spread some hummus over the whole pancake, ad thin slices of zucchini or cucumber on one side of the pancake, do the same with tomato slices, on top of the zucchini. Salt and pepper, put some lettuce on top and roll it up. Slice in half, finished.
