Ingredients: 4 salmon fillets 6 oz each. 2 tbsp coconut oil. 1/4 cup almond meal. 2 tbsp fresh parsley chopped. 1 tbsp fresh rosemary chopped. 1 tbsp fresh thyme chopped. 1 tsp garlic powder. 1 tsp sea salt. 1/2 tsp black pepper. 1 lemon sliced. 1 zucchini sliced. 1 red bell pepper sliced. 1 tbsp olive oil. Salt and pepper to taste.
Instructions: Preheat your oven to 375F 190C. In a small bowl, mix together almond meal, chopped herbs, garlic powder, sea salt, and black pepper. Rub coconut oil on the salmon fillets and coat them with the herb mixture. Place salmon fillets on a baking sheet lined with parchment paper and top each with a slice of lemon. Toss sliced zucchini and red bell pepper with olive oil, salt, and pepper. Spread them around the salmon on the baking sheet.
