Salumi di Buca, Olive Ascolane & Orecchio di Maiale by Renée Suen 孫詩敏 Via Flickr: Salumi di Buca Choice of 3 ($18) or 5 ($28) served with daily preserves. Naturally, I went with five. From top to bottom: (fantastic strips of) Eggplant Caponata Salame di Chinghiale cured wild boar salami, fennel, black pepper (perth pork farms) Lonza round leg of pork, juniper, corriander, black pepper (cambridge) Salame alla Lavanda cured pork salami, lavender (black english, church hill farms) *** Beautiful. I'm not usually a fan of lavender (makes me think of soap) but the silky, supple texture of the well marbled salami with the subtle aromatics really worked. Cavallo cured horse shoulder, juniper, black pepper (bouvry farms, alberta - add 5$) - I like eating horse meat. Salisiccine spicy calabrese style pork sausage (whey-fed mennonite, john orofino) *** addictive. Good chew texture. Olive Ascolane duck sausage stuffed olives, $8 Orecchio di Maiale pig's ears, wild fennel, sale di cervia, $8

Capesante by Renée Suen 孫詩敏 Via Flickr: Raw New England scallops, ramps, n'duja, cucumber, spring greens , $18 Compliments of the kitchen. The greens and ramps were delightful. There was this slightly cooked crispness to them that reminded me of very well done (gently cooked) Chinese stir-fried greens. Delicious. The scallop crudo was a nice, mild and silky foil to the slightly crisp edge of the greens. A very enjoyable starter.
